Getting your mushroom substrate mix right is, honestly, the single biggest thing that decides whether you harvest a beautiful flush or open a bag of green mould. Spawn matters, fruiting conditions matter — but the substrate is the food, the home and the battleground all at once. Choose well and your mushrooms power through. Choose badly, or skimp on the prep, and contamination wins. This guide walks you through what substrate actually is, how to match it to the species you’re growing, and the handful of reliable recipes we come back to again and again.
What is a mushroom substrate, exactly?
A substrate is simply the material your mushroom mycelium grows through and feeds on before it fruits. Think of it as the soil equivalent for fungi — except fungi don’t photosynthesise, so everything they need to build those fruiting bodies has to come from the substrate itself.
Different mushrooms have evolved to break down different materials. Most of the gourmet and functional species we grow are wood-loving (lignicolous) or happy on agricultural by-products like straw. The trick is feeding them what they’re built to digest, in a form that’s clean, hydrated and nutritious enough to fruit well.
A good mushroom growing substrate generally needs four things working together:
- The right base material — straw, hardwood sawdust, supplements, or a blend.
- Correct moisture — hydrated to “field capacity” (more on that below).
- A clean start — pasteurised or sterilised so your mushroom isn’t competing with mould and bacteria.
- The right nutrition level — enough food to fruit, but not so rich it spoils before the mycelium colonises.
That last point is the balancing act. A richer substrate gives bigger yields, but every gram of nutrition you add is also food for contaminants. More on why that matters near the end.
Match the substrate to the species
There’s no single “best” recipe — the best substrate mix depends entirely on what you’re growing. Here’s the short version before we get into the recipes.
- Oyster mushrooms (Pleurotus) — the most forgiving species. They thrive on pasteurised straw, and they’ll also happily take Master’s Mix, coffee grounds and many other agricultural wastes. A brilliant beginner crop.
- Lion’s mane (Hericium erinaceus) — a wood-lover that wants supplemented hardwood sawdust or Master’s Mix. It needs more nutrition than oysters and does best on a sterilised (not just pasteurised) substrate.
- Reishi, shiitake and most “wood” mushrooms — supplemented hardwood sawdust blocks, sterilised.

Recipe 1: Pasteurised straw (the classic oyster substrate)
If you’re growing oysters, start here. Straw is cheap, widely available across South Africa, and oyster mycelium colonises it fast and aggressively.
- Material: wheat or barley straw, chopped to roughly 2–5 cm lengths. Avoid hay (too high in nitrogen and far more prone to contamination).
- Prep: pasteurise — soak in hot water held at 65–80 °C for 60–90 minutes (keep below about 80 °C), then drain.
- Best for: all oyster varieties (blue, pearl, pink, king).
Pasteurised straw is low-nutrition, which is exactly why it works so well for fast, competitive oysters — they outrun contaminants before anything else gets going. Recipe 2: Master’s Mix (the all-rounder)
Master’s Mix is the workhorse of small-scale gourmet growing, and probably the most useful mushroom substrate recipe to learn. It’s a simple 50/50 blend by dry weight:
- 50% hardwood sawdust (oak, beech, or local hardwoods — never pine or other softwoods, whose resins inhibit growth)
- 50% soybean hulls
The soy hulls add a big nutrition boost, which pushes yields well above plain straw. The catch: that richness means Master’s Mix must be sterilised, not just pasteurised, or it will almost always contaminate. It’s the go-to substrate for both oysters and lion’s mane, which makes it a great single recipe to standardise on if you’re growing a couple of species.
Rule of thumb: the more nutritious the mix, the harder you have to sterilise it. Plain straw forgives pasteurisation; Master’s Mix does not.
Recipe 3: Supplemented sawdust (for lion’s mane and wood-lovers)
Lion’s mane is one of our favourites to grow — those cascading white “icicles” are stunning — but it’s fussier than oysters and wants a wood-based substrate with a nutrition supplement.
- Base: hardwood sawdust or fine hardwood pellets (fuel pellets work well once hydrated and broken down)
- Supplement: around 10–20% wheat bran by dry weight
- Optional: 1–2% gypsum (see below)
- Prep: sterilise (these supplemented blocks contaminate easily otherwise)
This is the traditional “fruiting block” recipe used for shiitake and reishi too. Recipe 4: Coffee-ground mixes (the kitchen-scrap option)
Spent coffee grounds are a bit of a gateway drug for new growers — free, abundant, and already pasteurised by the brewing process. Oysters in particular love them.
- Use them fresh: grounds spoil fast. Inoculate within about 24 hours of brewing, or they’ll go mouldy before you start.
- Don’t go 100% coffee: grounds compact and can go anaerobic. Blend as a minority of the mix (about 25-30% coffee to 70-75% pasteurised straw or sawdust), using grounds that are fresh (within about 24 hours of brewing) for far better airflow and reliability.
- Best for: oysters. They’re the only common species robust enough to handle coffee’s quirks consistently.
It’s a fun, low-cost experiment — just don’t expect the consistency of a properly sterilised block.
Recipe 5: CVG (coir, vermiculite, gypsum)
CVG stands for coco coir, vermiculite and gypsum in roughly equal parts coir and vermiculite (about 1:1 by volume) with a small amount of gypsum, hydrated to field capacity. It’s the standard substrate for dung-loving mushroom species rather than the wood-lovers above, but it’s worth knowing because it’s so clean and beginner-friendly.
- Coir: provides bulk and water retention
- Vermiculite: improves structure and holds moisture
- Gypsum: adds calcium and stops the mix clumping
- Prep: coir is usually hydrated with boiling water, which pasteurises it in the bucket — simple and reliable
CVG is prized precisely because it’s nutrient-poor and easy to keep clean. It’s not what you’d reach for with oysters or lion’s mane, but if you ever branch into coir-based growing, this is the recipe.
Hydration: getting to “field capacity”
Moisture is the step most beginners get wrong, and it’s worth slowing down for. You’re aiming for field capacity — fully hydrated, but not waterlogged.
The squeeze test is all you need: grab a handful of prepared substrate and squeeze hard. You want a few drops of water to run out between your fingers — a trickle, not a stream. If water gushes out, it’s too wet and will go anaerobic (that sour, swampy smell) and invite bacteria. If nothing comes out at all, it’s too dry and the mycelium will struggle to colonise.
Too wet is the more common — and more damaging — mistake. Soggy substrate is a contamination magnet.
Pasteurisation vs sterilisation (and why it matters)
This distinction trips everyone up, so let’s be clear. Both are about reducing competition for your mushroom, but they work at different intensities.
- Pasteurisation holds the substrate at 65–80 °C for 1–2 hours. It knocks back most moulds and bacteria but leaves some beneficial organisms alive. Good enough for low-nutrition substrates like plain straw, where fast oyster mycelium can out-compete the survivors.
- Sterilisation uses a pressure cooker at 15 psi (about 121 °C) for a couple of hours to kill essentially everything, including heat-resistant spores. Required for nutritious substrates — Master’s Mix, supplemented sawdust — where any survivor would explode in that rich food.
Simple guideline: low-nutrition substrate → pasteurise; high-nutrition substrate → sterilise. Get this match wrong and you’ll either waste effort over-treating straw, or watch a beautifully supplemented block turn green.
What does gypsum actually do?
Gypsum (calcium sulfate) shows up in a lot of recipes and earns its place. It does three quiet but useful jobs: it supplies calcium and sulphur as nutrients, it acts as a pH buffer keeping things in the slightly acidic range fungi prefer, and — as an “anti-clumping” agent — it keeps fine substrates like sawdust from caking into airless lumps. A typical addition is around 1–2% by dry weight. It’s optional, but cheap and genuinely helpful.
Why contamination happens (and how the right mix prevents it)
Almost every contamination problem traces back to one idea: your mushroom is in a race. The moment you inoculate, your mycelium and any stray moulds or bacteria are competing for the same food. Your job is to give your mushroom every advantage.
Contamination usually comes from one of these:
- Under-treated substrate — pasteurising a rich mix that needed full sterilisation.
- Too much moisture — waterlogged, anaerobic substrate that favours bacteria over fungi.
- Poor sterile technique — introducing spores when you spawn (work clean, ideally in still air or in front of a flow hood).
- Too little spawn — a higher spawn rate means your mushroom colonises faster and leaves less of a window for invaders.
- Spoiled materials — old coffee grounds, mouldy straw or stale supplements that were already colonised before you started.

A quick note on quality and sourcing
Whatever recipe you choose, the inputs matter. Clean, fresh straw; proper hardwood sawdust (never softwood); fresh supplements; and good spawn from a reliable source all stack the odds in your favour. One last safety word that has nothing to do with substrate but everything to do with mushrooms: only ever eat species you have cultivated yourself from known spawn or sourced from a trusted supplier. Never eat a wild mushroom you cannot 100% identify — some toxic species are easily mistaken for edible ones.
Frequently asked questions
What is the easiest mushroom substrate for beginners?
Pasteurised straw with oyster mushrooms. It’s cheap, only needs hot-water pasteurisation rather than a pressure cooker, and oysters colonise so fast they shrug off most contamination. Spent coffee grounds blended with straw are a close, free second.
Can I reuse mushroom substrate after fruiting?
Not really for a second indoor crop — by the time it has fruited, the nutrition is largely spent and contamination risk is high. It is, however, excellent for the compost heap or garden, and spent oyster blocks broken up outdoors will sometimes throw a surprise flush after rain.
Do I always need to sterilise my substrate?
No — it depends on nutrition. Low-nutrition substrates like plain straw or coir only need pasteurisation (65–80 °C for 1–2 hours). High-nutrition mixes like Master’s Mix or supplemented sawdust must be properly sterilised in a pressure cooker, because any surviving contaminant would thrive in that rich food.
Why does my substrate keep going mouldy?
The usual culprits are a substrate that was too wet, under-treated for its nutrition level, or contaminated during spawning. Dial in field capacity (only a few drops when squeezed), match your heat treatment to the recipe, work as cleanly as possible, and use a generous spawn rate so your mushroom wins the race.
